Bikini Recipe

Serves 10 servings

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Premix (yields 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Method

To prepare the Cordial: Put all the items in a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. Then, remove from the burner allowing it to reach room temperature entirely. Decant into a clean bottle, close it and refrigerate it in the fridge, it will last for about a month.

For the Premix: Combine every liquid ingredients into one large bottle, let it rest for 60 minutes, then filter it best through muslin, to ensure it's completely strained.

For serving: Pour 85ml of your batch mix into your mixing glass containing ice, gently stirring carefully for about 60 seconds to chill. Filter into a chilled martini glass or a similar vessel, garnish with a few cranberries and complete it using a brief mist of the essential oil over the top.
